White Peach Ricotta Medley

The white peach ricotta medley is a great way to experiment with new textures, and to incorporate dairy into baby’s diet.

Baby Foods Adults Actually Want To Eat

Since ricotta is a very flavour-neutral food, you have the opportunity to customize each serving differently (we love adding a splash of bourbon to the adult portion!), or switch things up between sweet and savoury. It is also the perfect food to give to baby when you are starting to let them self-feed because of the lack of ‘colour’, and therefore low risk of staining everything. Win, win!

White Peach Ricotta Medley

Ingredients

  • 2 white flesh peaches (you can absolutely use regular peaches too!)
  • 1 cup ricotta cheese
  • 1/4 tsp ground ginger

Optional Additions

  • 1/4 tsp ground nutmeg
  • 1 tsp fresh ginger pieces
  • 2 tbsp bourbon (add to the adult portion only!)

Instructions

1. Peel and slice the peaches and place in a pot.
2. Add the ground ginger (and any other spices of your choosing.

3. Cook over medium heat for approximately 10 minutes until peaches are soft.

4. Mash (or purée) the mixture. The peaches can be mashed or pureed depending on where you are at in baby’s food journey.

5. Add the mixture to the ricotta and stir.

6. Serve as-is to baby (always temperature check!) & serve cool for additional servings.

And there you have it: a simple treat that can be eaten for breakfast, dessert, or as a snack. My yogourt-and-cheesecake-hating husband will only eat it over ice cream or as a topper for cake because of the texture, but I am all for grabbing a spoon and enjoying it like a rice pudding. Especially if we add the bourbon and nutmeg to a portion of peaches we’ve left in the pot to cook off the booze–it almost ends up like a flour-free peach cobbler. Yumm! Now I want our slow cooker peach cobbler…

Can be frozen as individual portions for up to 6 weeks, where thawing in fridge prior to serving is recommended to preserve texture.
